Scientists use the various solar observing satellites and ground observatories to determine what the Sun is made of and how it behaves. All the different instruments we have observing the Sun either look at it in different wavelengths or different types of data. We use all of this data and then add it to different models to help us get a more complete picture of the Sun. There is still more to learn though!
