That is an interesting question, and I think we just don't know. The shape of the sunspot is connected to the structure of the magnetic field which causes the spot. A simple magnetic field makes for a round spot. a more complex field leads to odd shaped spots. But why are the fields in some spots simple and others complex? We are still working on that one.
